
A Long Time Ago...
There is a reason why the World Kombucha Day is set as 21st February (221). The reason is tightly linked to 221 BCE, where the origin of kombucha, the first recipe, is thought to have originated from that time in China's Qin Dynasty. The brewers in the northern kingdom of China and Korea figured out how to take symbiotic cultures of bacteria and yeast, and together they formed a mushroom-like disc known as the SCOBY, symbiotic culture of bacteria and yeast. They use it to ferment sugared tea, and name the end-product as the “Tea of Immortality”, after realizing that those who consume the end-product gained wonderful health benefits, such as skin revitalization, weight loss, healthy guts, etc.
In about 414 BCE, a Korean doctor, was believed to have brought the method for fermentation across the sea to Japan, where he served it to emperor Ingyō, Japan’s 19th emperor, and the fermented tea became widely spread due to its extraordinary health benefit. According to legend, that doctor’s name was Kombu. Therefore it is believed that the doctor's name has an influence in the naming of the fermented tea.
